I’m always on the lookout for really good, really healthy recipes. Healthy food doesn’t really have a good reputation of always tasting great, but I’m convinced it doesn’t have to be that way.
While it is true there are healthy recipes that don’t taste good, there are many, many more that taste absolutely wonderful!! What I find helps me, is to keep in mind the types of flavors my family enjoys. As I search for new recipes, I keep those flavors in mind.
The three recipes below are perfect examples of that for my family. We love spicy and we love Italian — both of which we want full of as much flavor as possible.
This first recipe fits those requirements to a tee! I’ve wanted to find a good homemade salsa recipe for a long time, but just couldn’t find one that met all our criteria. We like it to have a good “kick” to it, but also want some really good flavor. And, while I love salsa, I really don’t care for tomatoes (wierd, I know!) So, I don’t want my salsa to taste too “tomato-y”.
This salsa is full of flavor and leaves room for you to adjust the spicy and tomato flavors to be just how you like. In our case, I used Roma tomatoes and I added an additional small jalapeno and an additional splash of red wine vinegar. I believe I also added an additional small clove of garlic. Yummy!
Next up is this Chili Lime Chicken. Yes, spicy wins over for us just about every time! 🙂 It’s just a great way to add flavor just so long as you don’t make it so spicy you can’t taste anything else.
My son isn’t a real big chicken lover, but he really liked this chicken recipe. It’s got a great combination of sweet and spicy flavors that go so well together. I think it would also make a great chicken sandwich or I’d love to try shredding the chicken and using on a tortilla for soft tacos.
This last one fits perfectly with the Italian flavors that we love. After all, can you really beat Prosciutto? My son would tell you no… he loves Prosciutto almost better than bacon! 🙂
This recipe also fits into another category in which I’m also searching — side dishes! Unfortunately, I’m just not big on vegetables (nor are my children.. although, that probably to be expected somewhat), so if I can add other really good flavors, I enjoy them so much more! I figure if I’m going to eat them (and I want to because I know how good they are for me!), I want them to taste as good as possible. I’ve also found — at least in my house — that adding other flavors is also a great way to encourage kids to eat more vegetables.
The only thing I would mention about this recipe is the prosciutto is salty, so if you don’t like a lot of salt, you might want to use smaller pieces of prosciutto to wrap around the asparagus. Also, my grocery has only been carrying the skinny asparagus lately, so I’ll wrap 3-4 asparagus in one piece of prosciutto so I have little bundles. Works great!
